Summer Cheesecake with Almond Cream – Ecomil

A simple sweet treat, perfect for summer. Created for Ecomil by food technologist @earthlytaste, this recipe shows the versatility of the brand’s popular organic Almond Cuisine cooking cream and celebrates the simple pleasure of fresh, seasonal fruits. 

Ingredients — cheesecake cream

  • 350g dairy-free cream cheese

  • 200ml Ecomil Almond Cuisine cooking cream

  • 60g coconut oil, melted

  • 120g organic cane sugar

  • 2tsp vanilla extract

Ingredients — base

  • 120g digestive biscuits or cookies

  • 1-2tbsp organic sugar or 20g agave syrup

  • 40g coconut oil, melted

Method

1.   Start by making the base: blitz or crush the crackers with some sugar or agave syrup and mix with the melted coconut oil.

2.   Press the mixture into the bottom of four small glasses and flatten it with a spoon so that it sticks to the bottom. Place the glasses into the fridge to chill while you prepare the filling.

3.   For the filling, blend cream cheese, Ecomil Almond Cuisine cooking cream, melted coconut oil, sugar and vanilla together until smooth and creamy.

4.   Distribute the mixture evenly between the four glasses.

5.   Refrigerate overnight.

6.   Top with fresh berries or your favourite summer fruit before serving.
