Avocado Salsa with Kep Sea Salt Rice Cakes – IBIS Rice

Ingredients
2 medium-sized tomatoes
1 large avocado
1 medium-sized onion
Fresh coriander
A splash of Tabasco
1 lime
Salt
Ground cumin

Method
Dice the tomatoes and avocado into 1cm sized chunks and place into a mixing bowl.
Finely chop the onion and stir to combine with the tomato and avocado.
Finely chop some coriander leaves and gently add them to the mix.
Squeeze into the bowl the juice of one lime, before sprinkling a teaspoon of cumin powder.
Add a pinch of salt and mix gently.
With a final splash of Tabasco sauce, you’re ready to serve atop Organic Wholegrain Rice Cakes with Kep Sea Salt.
